
Gluten and lactose - free almond pancakes
And again pancakes. And this time without gluten and also without lactose.
It is a tasty omelette that is quick and easy to make.

Mix all the omelette ingredients (except the tortilla) in a bowl.
Grease a frying pan with oil and place the tortilla in the pan (the edges will slightly curl up forming a 'bowl').
Pour the omelette ingredients onto the tortilla, put the lid on the pan, turn the heat down to low and bake until ready (until the middle is 'set').
You can also bake it in a deep tin in the oven.
