I discovered a very tasty omelette that I can eat twice a day. I'm sharing it with you.

First, sauté the broccoli (I added water to the bowl of broccoli and put it in the microwave for 5 minutes).
Cut the shrimp (already cooked) into smaller pieces. Chop the spinach or the scallions and add to the shrimp.
Drain the water from the cooked broccoli and transfer it to the pan. Add the prawns and herbs.
Beat the egg with the egg white and pour over the broccoli. Bake, stirring occasionally.
