Spinach, zucchini waffles with cheese

A great idea for a tasty, filling and healthy meal that's also easy to take on the go.

Ingredients
 2 Small eggs
 345 g Zucchini
 150 g Natural yogurt
 120 g Flour (I use corn flour)
 60 g Spinach
 30 g Dor blue cheese (or other cheese with a stronger flavour up to ~ 340 kcal/100 g)
 49 g Cheese 10%
 10 g Garlic
 1 tsp. Baking powder
 Salt, pepper
Directions

Grate the zucchini and salt it lightly. Set aside and squeeze out the excess liquid. Grate the cheeses.

Beat the eggs with the yoghurt, add the zucchini, squeezed garlic, grated cheeses, flour, and baking powder and mix everything.

Place the batter in a preheated waffle pan and bake the waffles. Or fry like pancakes in a regular frying pan under the lid at a very low temperature.
