 2 Eggs
 200 g Fresh, grated pumpkin
 180 g Skimmed milk curd
 150 g Skimmed milk kefir
 100 g Flour (I use 50 g corn + 50 g wholemeal oatmeal)
 1 tbsp Lemon juice
 A pinch of salt
 Sweetener at will, cinnamon

Grate the pumpkin.

Blend the eggs with cottage cheese, kefir, sweetener.

Add pumpkin, flour, lemon juice to the egg mass, mix everything.

Put the dough over a spoon in a heated waffle pan and bake ready. Or bake in an ordinary pan under the lid, at a very low temperature.

Serve with cranberry jam (boiled cranberries and blended with either honey or sweetener).
