Pumpkin cake with dried apricots (gluten-free)

 2 Eggs
 300 g Pumpkin (fresh)
 80 g Corn flour (whole wheat flour can also be used)
 60 g Dried apricots
 30 g Oat bran
 30 g Butter
 10 g Baking powder
 2 tsp. Cinnamon
 Sweetener
Directions

Cut the pumpkin into small pieces, place in a bowl, cover and microwave for 5 minutes (or sauté on the stove) Cool and blend with a hand blender.

Cut the apricots into small pieces.

Mix all the dry ingredients - flour, oat bran, baking powder, cinnamon and apricots.

Add the eggs, oil and sweetener to the pumpkin mixture and blend well.

Add the dry ingredients, mix well, place in the tin and bake at 170-175 °C for ~40 minutes.
