
Spinach Omelette with Cheese and Scallions
Ar dzelzi un olbaltumvielām bagātas brokastis – spinātu omlete ar sieru un zaļajiem lociņiem.
Chicken fillet cutlets with pumpkin and couscous. This time I fried them in a pan. And they turned out very tender and juicy.

Grate the pumpkin on a fine grater.
Pour boiling water over the couscous and leave to swell.
Add the egg, chopped onion, garlic, grated pumpkin, and couscous to the cutlet mixture and season with salt and spices.
Heat a frying pan and grease it with oil. Form round cutlets and place in the pan. Turn the flame down to very low and fry/sauté the meatballs on both sides until ready. Add water as needed.
