Ingredients for the Base
 1 Egg
 240 g Skimmed milk curd
 25 g Coconut oil (or butter)
 50 g Rice flour (or any other flour)
 40 g Corn flour (look after the curd moisture - other times 80G flour is enough)
 ½ tsp. Baking powder
 A pinch of salt
 Vanilla
Ingredients for filling
 300 g Blackberries
 80 g Egg white
 10 g Corn starch
 10 g Flour (I had rice flour)
 1 tsp. Baking powder
 Sweetener (I put 50/50 erythrol + vanilla stevia drops.)

300g blackcurrants (I had frozen) ber in a saucepan, add sweetener (to taste - because they are quite strong, will need more than other fruits, berries) and a little cook. Pour into a wide container to cool.

Beat eggs with melted fat, sweetener, cottage cheese, baking powder, vanilla, add cottage cheese, flour. Hit the ball. Look at the moisture content of the cottage cheese: if the dough is wet and still sticks to your fingers, add more flour.

The dough is wrapped in cling film or bag and placed in the refrigerator for ~ 30 minutes or less in the freezer.

Whisk the egg whites in a stiff foam (you can take the egg whites from 3 eggs, or as I: use from a 1kg pack).

Add starch, flour, sweetener, baking powder and whisk again.

Remove the dough from the refrigerator and form it, forming the side "sides".

Carefully mix the blackcurrants into the beaten egg whites.

The mass is poured on the base and placed in the oven at ~ 175 degrees for ~ 25-30 minutes.
