Sprinkle the couscous with boiling water and leave to swell.
Chop the greens and mix with couscous. Add a little salt (remember the cheese salty), herbs, ground pepper.
Arrange the lettuce in a bowl, top with couscous mixed with greens, transfer the diced watermelon, feta cheese, walnuts.
Drizzle with balsamic sauce.
