This is one of those treats I could bake and eat every day!

Lavash vanilla pie with apple and pear

Ingredients (diameter of the mold 22 cm)
 2 Eggs
 140 g Egg white
 ½ Whole wheat lavash Prima food (60 g) or 1 tortilla medium, (~62 g)
 250 g Skimmed milk curd
 240 g Apple
 193 g Pear
 10 g Vanilla sugar
 1 tsp. Baking powder
 Sweetener as needed
Directions

Cut the lavash into ~2cm wide strips and then into ~1-2 mm wide strips.

Whisk eggs in a bowl, add egg white, cottage cheese, sweetener, vanilla sugar and whisk until smooth.

Cut the apples and pear into thin slices.

Add the cut apple, pear and lavash to the egg-curd mixture and mix.

Place the dough in the tin, smooth it out (slightly flatten it), place it in the oven at 175-180 °C and bake for ~35-40 minutes.
