Wholegrain apple cake roll with raisins and cinnamon

Ingredients for Sponge Cake
 2 Eggs
 200 g Flour (I use whole wheat flour)
 180 g Skimmed milk curd
 Sweetener of your choice
 Vanilla
Ingredients for filling
 450 g Apples
 30 g Raisins
 30 g Nutty grillage (nuts roasted in honey: 40 g honey + 60 g walnuts)
 1 tsp. Cinnamon
 For coating 1 egg yolk + 20 nut grill
Directions

Mix all the sponge cake ingredients and put the dough in the fridge while you prepare the filling.

Peel and grate the apples, add the raisins, grilllage and sweetener if necessary.

Remove the dough from the fridge and place it on baking paper generously dusted with flour. Roll out the dough into a rectangular shape (to make it easier you can put cling film on the dough).

Place and spread the filling on the dough. Carefully roll the dough into a roll (like rolling sushi) with the help of baking paper.

Brush with egg yolk, sprinkle with nut grillage (20 g), place in an oven preheated to 180 °C and bake for ~35 minutes.
