Pancakes or sweet waffles are definitely suitable for the holidays.
I let the taste buds "play" - :)
Beat the egg with cottage cheese and 30g of melted butter (10g left to crumbs).
Add 40g of rice flour and 40g of coconut flour (30g of flour is left on top).
Mix the dough (non - sticky, but quite crumbly) and refrigerate for 20 minutes.
Meanwhile, add 10g of butter to 30g of coconut flour and crush the crumbs by hand.
Remove the dough from the refrigerator and divide into 4 equal parts.
With your hands on a tray, directly on a baking paper or silicone mat, create tarte shapes, each with its own fruit - berry filling.
Sprinkle with crumbs and place in the oven for about 30 minutes at ~ 175-180 degrees.

This vegan cake is not complicated and is really, very delicious. If you are not friends with dairy products and eggs - it will be a great alternative to all cakes.
