Coconut milk, tomato and paprika soup with noodles and chicken fillet

Coconut milk adds a charming flavour to the soup.

Ingredients
 800 g Vegetable stock (I used a stock cube)
 400 g Coconut milk (light)
 400 g Chicken fillet
 400 g Bell pepper (paprika)
 400 g Canned tomatoes in their own juice (cut into pieces)
 125 g Rice noodles (or any other cereal)
 120 g Onion
 40 g Greens (dill, parsley)
 12 g Ginger
 10 g Oil
 Chilli pepper
 Soy sauce
 Lime juice
Directions

Heat ~10g of oil in a deep frying pan. Quickly fry the chicken, cut into small strips and remove.

Put the sliced onions, peppers, chilli and grated ginger in a pan and fry/sauté lightly. Add coconut milk and stock.

Add the meat and tomatoes and bring to the boil. Add the noodles and cook for a few minutes.

Add the greens, soy sauce and lime juice to taste.
