A delicious and healthy treat made with whole grain flour, sugar-free and fat-free!

Pumpkin Loaf Cake with Dried Fruit and Walnuts
Servings6 Servings
CategoryDifficultyEasy
Ingredients
 3 Small eggs
 80 g Egg white
 200 g Fresh pumpkin
190 g Dried fruit/berries (I have apricots, dried cranberries, and raisins)
 150 g Kefir 2%
 150 g Whole wheat flour
40 g Nuts (walnuts for me)
 1 tsp. Soda
 ½ Orange juice
 Ginger, cinnamon
 Sweetener of your choice
Directions
1

Kefir is punished and left to act.

2

Grate the pumpkin on a fine grater.

3

Whisk the eggs with the egg white.

4

Add the grated pumpkin, flour, and spices.

5

If necessary, chop the dried fruit/berries and add them to the dough.

6

Place the dough in a baking tin and bake in an oven at ~160-170 °C for ~50-90 minutes. The baking time depends on the size of your baking tin. My baking tin is 10 x 25 cm. After ~20 minutes, cover the tin with foil to prevent the top from burning. Remove the foil before the end of baking.

7

10 minutes before the end of baking, remove the loaf cake from the oven, sprinkle with orange juice and return to the oven.
