
Lavash Roll with Mushrooms and Carrots (without eggs)
A simple, quick-to-prepare, super tasty and filling mushroom and carrot roll.
I've made something similar with chicken fillet before. I'm using turkey mince in a slightly different variation this time—very delicious!

Add the egg, chopped onion, garlic and grated pumpkin to the turkey mince. Season with salt and spices.
Divide the mass into 4 equal parts. Form round cutlets forming a depression in the middle and place a slice of pineapple in the middle. Place on a baking tray.
Add egg to 150 g of cottage cheese and beat. Add the finely chopped scallions. Divide the mixture into 4 parts and place on top of the pineapple rings.
Place the cutlets in the oven at ~180 °C for ~40 minutes (until the cutlets are lightly browned).
