I wanted to make something beautiful and colourful for my third healthy and active lifestyle camp: "Drop the Excess".
I would not have thought that such delicious waffles could be made from zucchini! They are adorable!

Grate the zucchini on a fine grater.
Beat both eggs with erythritol. Add cocoa, milk, and oil. Beat again. Stir in the zucchini.
Add the flour mixed with baking powder.
Spoon the batter into the waffle pan and bake the waffles.
