Zucchini "spaghetti" with avocado sauce

This dish is something unique! It could definitely be served in the best restaurants!

Ingredients for "Spaghetti"
 600 g Zucchini
 150 g Cherry tomatoes
 A little extra virgin olive oil
 Salt, lemon pepper and other spices of your choice
Ingredients for Avocado Sauce
 1 Ripe avocado
 100 g Natural yogurt
 50 g Kefir 2%
 35 g Greens (coriander, spinach, basil, dill)
 20 g Garlic
 10 g Mustard
 5 g Honey
 Salt, pepper
 A little lemon juice for dressing the avocado
Directions

Prepare the sauce - Peel the avocado, cut, mash and drizzle with lemon juice.

Add the yoghurt, kefir, chopped basil, dill, garlic, salt and spices and blend until smooth.

Make the spaghetti - Grate the zucchini into long strips (on a special grater) or finely cut into strips with a knife.

Place in a large bowl, add the salt, lemon pepper and spices and mix everything together.

Place the zucchini in a hot pan and fry for ~5-7 minutes. If there is a lot of liquid, pour it off. The less time/faster you fry, the crispier they will be!

Cut and add the cherry tomatoes. Add the avocado sauce and mix everything.
