
Tortilla with Mozzarella
When on Sunday morning you want to "tie your breath" with something cheesy… :) Vegetarian tortilla with two types of cheese.
Zucchini pizza in a pan - always delicious!

Grate the zucchini, sprinkle with salt and set aside to drain.
Beat the eggs with the curd. Add the zucchini )squeezed excess juice), seasoning of choice and flour with baking powder. Mix everything.
Place the mixture in an oiled, heated frying pan, spread out and bake at a very low temperature for ~12-15 min.
Turn the zucchini base upside down. Spread with adjika, top with sliced tomatoes and scallions, and sprinkle with grated cheese. Cover the pan and bake for ~ 10 minutes until the cheese melts.
Put the lid on the pan and bake for ~10 minutes until the cheese melts.
