
Pie with pear and persimmons
Winter is when we eat persimmons. Fresh or baked in a pie.
There are never too many recipes with tortillas. A simple and delicious breakfast.

Beat the eggs, add the salt, spices and scallions and pour into a preheated frying pan (28 cm) lightly greased with oil.
Place a tortilla on top and press down lightly. Cover the pan with a lid and allow the omelette to fry over a low heat.
Turn the omelette over, sprinkle with the grated cheese, place the sliced spinach on top, put the lid on the pan and let the tortilla cook a little from underneath. Then fold over and remove from the pan.
