It's been a long time since I made these delicious zucchini pancakes!

Ingredients for pancakes (pan diameter 28 cm)
 2 Eggs
 360 g Zucchini
 200 g Kefir 2%
 200 g Flour (I use corn flour)
 80 g Onion
 15 g Garlic
 1 tsp. Baking powder or soda (3 g)
 Salt, pepper, spices of your choice
Ingredients for filling
 250 g Ground turkey (or chicken) fillet
 100 g Carrot
 70 g Onion
 15 g Garlic
 50 g Cheese "Bresto light" (or 10% cheese or other lean, well-melting cheese)
Directions

First, fry the ground meat, carrot and onion with the spices. Cool and add grated cheese. Mix and divide into 4 equal portions.

Grate the zucchini, add salt, mix and set aside to drain.

Squeeze out the excess liquid from the zucchini, add the eggs, kefir, chopped onion, garlic, flour, salt, pepper, spices and baking powder.

Divide the dough into 4 equal parts. Place 1/4 of the dough in a pan lightly greased with oil, spread it out, put the fried meat on top and cook at a very low temperature under the lid (~10 min). When the bottom has 'set', fold the pancake in half, press down and cook for a while.

Repeat for the rest of the pancakes.
