Do you like eclairs? Yes, me too! Like wind cakes. And now I have my own recipe for scalded dough, from which you can bake both wind cakes and eclairs.
In the summer, when there is such a huge range of different fruits and berries, you want them all at once! A little bit of everything and a delicious, juicy curd cake is made!
Blend the eggs with cottage cheese, natural yoghurt, sweetener, starch and flour.
Stir in the sliced fruit / berries.
60g egg whites whipped into a stiff foam and stir in the curd - berry mass.
The mass is poured into a mold and baked ready ~ 175 degrees.
