Apricot-curd cupcakes

The sight of beautiful apricots in the store just excites my imagination - I want to cook something delicious from them. For example, sweet fruit cupcakes.

Ingredients for basket dough
 1 Egg
 180 g Skimmed milk curd
 50 g Flour (I put corn flour). The quantity is regulated by the moisture content of the curd.
 10 g Extra virgin olive oil
 1 tsp. Baking powder
 Sweetener of your choice
Ingredients for filling
 2 Large eggs (120 g)
 100 g Apricots (pitted weight)
 100 g Culinary cottage cheese "Baltais"
Directions

Add egg, oil, flour, baking powder, sweetener to cottage cheese. Mix the dough (the dough may stick to your hands a little, but you can form it by moistening your hands).

The dough is divided into 6 equal parts and placed in cake molds, forming a basket.

Cut the apricots and put them in baskets (on the bottom).

Beat 2 eggs with culinary curd, sweetener, and vanilla.

Pour the mixture into baskets of apricots. Put in the oven and bake at ~ 175 degrees until they get a light golden color (I bake for 35 minutes).
