Peel the apples, cut into small pieces, put in a pan, add cinnamon, syrup, erythritol and stir-fry soft. Set aside.
In a bowl, add 300 g of flour, sugar, erythritol and baking powder.
Grate the cold butter in flour on a coarse grater.
Add 2 egg yolks (egg whites will remain for one morning's breakfast omelette) and mix everything by hand to form crumbs.
