Gluten and lactose - free almond pancakes
And again pancakes. And this time without gluten and also without lactose.
What can only be made from courgettes! This time I share an unrealistically delicious, gentle and hearty zucchini roulette. A little effort, but it's worth it!
Grate the zucchini and sprinkle with salt. Set aside so that it melts.
Grate the cheese, cut the greens.
Beat the eggs, add grated cheese, herbs, garlic, pressed zucchini.
Mix everything and pour the dough into a heated (good, non-stick) pan.
Bake at a temperature that is not too hot - so that it can "stick" to both the top and bottom.
When the bottom is baked, roll the "pancake" towards one side of the pan with two spatulas (or by hand - do not burn carefully!).
Pour into a cup and spread the next portion of dough. When it is baked, the pancake is rolled back to the edge. So until the whole dough is baked.
At the end, roll up, put the lid on the pan and leave for about 5 minutes.

It often happens that I have been nurturing a thought for a long time, and then, one fine day, it is realized. This time it was a cake with sea buckthorn.
I have long dreamed of a cake with sea buckthorn. Well, it happened, I "dropped" a bit of white chocolate decor (I got too much liquid for it), but since it was for "own use", it didn't ruin anything. Because the cake was really delicious.
A simple but very tasty dessert.
