Cake for Latvia with meringue walnuts and cherries

This year I didn't even plan to make a special cake for our Latvian birthday, but somehow I managed to make it. And besides, very, very delicious! Because the holiday must be celebrated!

Ingredients for meringue wheels
 150 g Egg white
 200 g Sugar (preferably icing sugar)
 70 g Walnuts
 60 g Corn starch
Ingredients for Cherry Jam
 800 g Frozen cherries
 40 g Corn starch
 Sweetener
Ingredients for Cream
 250 g Ricotta fresh cheese (11% or 6%)
 150 g Sugar (or sweetener)
 300 g Fat curd cream Alma
 8 g Gelatin
 Vanilla
 Sweetener (if necessary)

Whipped egg whites in a stiff foam. Gradually add sugar. At the end add the potato starch.

Grind walnuts. Carefully add the nuts to the egg whites.

On baking paper, draw two circles about 18 cm in diameter and place the mass on them.

Initially, place the plates with meringue in a preheated oven at 170 degrees for 20 minutes at the bottom of the stove. Then reduce to 110 degrees, place the plate in the middle and continue to bake for another ~ 1 hour. The baking pans will almost double in size! Leave the discs to cool in the oven until the next morning.

Put 800 g of cherries in a saucepan, boil with sweetener.

Add the cornstarch and stir until the mass begins to thicken.

Place the cherries in a flat pan to cool completely.

Sprinkle the gelatin with cold water.

Saputo Ricottu with Alma, add sweetener and gelatin dissolved in a cold water bath.

Mix and set aside.

Assemble the cake.

A little Ricotta cream is set aside for decoration.

Put Ricotta cream on the puck, topped with cherries.

Apply a second disc, which is also smeared with Ricott-Alma cream and cherries.

I decorated the cake with the same cream with a pastry cap.

The cake is intended for QUICK EATING, because the meringue stays soft from cherries and cream quite quickly. But still very delicious!
