Cottage cheese buns with plums

So simple and so delicious!
Sprinkle noodles with lukewarm water and leave for 30 minutes.
Fry a sliced onion and carrots cut into fine straws in a pan lightly greased with oil and heated vigorously for a few minutes.
Eggplant and paprika are removed from the middle and cut into strips.
When the onion and carrots are cooked, add the eggplant and peppers and fry for a few more minutes.
Add half of the soy sauce (~ 4 eat, k, but look to your taste), add the squeezed garlic and grated ginger. Bake for a few more minutes.
Add glass noodles and the remaining soy sauce to the vegetables. bake for another 5 minutes.
Serve sprinkled with sesame seeds.
