Salmon pizza (with yeast)

Ingredients For the dough (for 2 pizzas)
 320 g Flour (120 g wholemeal wheat flour + 120 g rye flour + 100 g premium wheat flour)
 180 ml Warm water (40 °C)
 50 g Extra Virgin olive oil
 4 g Dry yeast
 1 tsp. Sugar
 ½ tsp. Salt
Ingredients For Top
 100 g Steamed salmon
 60 g Onion
 60 g Olives
 80 g Cheese 10%
 40 g Dor blue cheese (or other well-melting cheese with a distinct flavor)
 50 g Adjika
 50 g Cherry tomatoes
 30 g Pepperoni (careful - hot!)
 15 g Raspberry vinegar
Directions

Prepare the pizza dough - stir the yeast, salt and sugar into the warm water. Add the flour. Mix thoroughly (~3-4 minutes until the dough is smooth and does not stick to your hands). Cover with a towel and place in a warm place for 30 minutes.

After 30 minutes, knead the dough, cover it and place it in a warm place again for 30 minutes.

Meanwhile, prepare the topping: halve the cherry tomatoes and olives, grate the cheeses, slice the onion and marinate it in the raspberry vinegar.

Divide the dough into 2 equal parts. Place each on a separate sheet of baking paper, roll out thinly, brush with adjika and arrange the filling on top.

Place in an oven preheated to 200 °C and bake for ~20 minutes.
