Pavlova cake with boiled cream and fruits
Servings6 Serving
CategoryDifficultyEasy
Ingredients (diameter 26-28 cm)
 150 g Egg white (~4 eggs)
 200 g Sugar
 1 tbsp Potato starch (20 g)
 1 tbsp Vinegar
 A pinch of salt
Ingredients for Cream
 2 Eggs
 500 g Milk (2%)
 250 g Fresh cheese "Ricotta" (6%)
 50 g Corn starch
 Sweetener, vanilla
 400 g Various berries, fruits
Directions
1

Add salt to the egg whites and beat them into a light foam with a mixer.

2

Add sugar slowly, gradually, until the mass becomes thick and shiny.

3

Sift potato starch and vinegar into the mass and carefully mix the ingredients with a spoon (do not get carried away with mixing).

4

Put the mass in a form on baking paper and smooth it into a circle with a diameter of about 20 cm (I use a pastry ring).
Make a pit in the middle, and "side" along the edge.

Pavlova cake base

5

Place the egg-white mass in the oven preheated to 150°C (top/bottom mode), close the oven door, and immediately set the temperature to 90 °C. Bake the base for about 1 hour and 40 minutes, then turn off the oven, slightly open the door and let the meringue cool completely.

Preparation of the cream
6

Pour 500 g of milk into a saucepan, add 2 eggs, sweetener, vanilla, and corn starch, and heat while stirring until the mass thickens. Remove and cool thoroughly (I left it in the fridge overnight).

7

When the cream has cooled, add fresh "Ricotta" cheese and mix with a whisk at low speed.

Assemble the cake
8

Place the meringue on a large plate. Spread the cream on top (I filled it in a pastry bag and squeezed "balls" out of it, covering the entire surface of the meringue).

9

Arrange fruits and berries on top of the cream.
