A very tasty salad for breakfast.
Pumpkin, couscous and persimmons? Why not - it's delicious.

Peel the pumpkin, cut into small chunks and place in a saucepan with water.
Cook the pumpkin until almost ready, add the couscous, chopped hurma and sweetener of choice.
Cook, stirring, until tender. If desired, you can make a purée more homogeneous with a kitchen masher.
