I really like persimmons. They can be eaten not only fresh, but also in delicious desserts. What's more, they are very simple, incredibly tasty and, of course, healthy.

Pour cold water over the gelatin and let it swell.
Cook the redcurrants with sweetener and add cornstarch. Stir while heating until thickened. Cool.
Blend the persimmon with the cream cheese and sweetener in a blender.
Add the gelatin, dissolved in hot water, and blend thoroughly. Allow the mixture to cool and set slightly.
Blend again thoroughly and place one layer in a dessert dish. Top with currants, and then another layer of the persimmon and curd cream mixture. Decorate with pistachios and place in the fridge to set.
