
Little Pavlovas with berries
Lightly airy meringue cupcakes filled with aromatic cranberries and soft mango.
A healthy and delicious snack made with zucchini.

Preheat the oven to 180 °C.
Cut the zucchini into rounds.
Place the rounds on a baking tray. Sprinkle each round with your favourite spices and bake in an oven at 180 °C for ~20 minutes.
While the zucchini are baking, prepare the cheese, carrot, curd, and garlic mixture: mix the curd with cheese, grated carrots, eggs, and garlic. Add salt and other seasonings to taste.
Place the mixture on the zucchini rounds and return to the oven for ~10 minutes.
