Cottage cheese tart with blackcurrants

Ingredients for the Base
 1 Egg
 120 g Whole wheat flour (see +/- for curd moisture and egg size)
 80 g Dates
 80 g Skimmed milk curd
 20 g Butter (or coconut oil)
 1 tsp. Baking powder
Ingredients for Filling (1 round)
 270 g Blackcurrants (or other berries or fruits)
 50 g Water
 20 g Corn starch
 Sweetener, vanilla
Ingredients for Filling (2 rounds)
 4 Eggs
 350 g Skimmed milk curd
 50 g Milk or kefir 2%
 20 g Corn starch
 Sweetener, vanilla
Directions

Pour boiling water over the dates and leave for 30-40 minutes to make them soft.

Add 20g of melted butter, cottage cheese and dates to the egg - all is smoothed into a homogeneous mass.

Add baking powder to the flour, mix and add the eggs - curd - to the date mass.

Knead the dough and place it in the refrigerator for ~1 hour.

Put the berries with sweetener in a saucepan and bring to a boil. Add cornstarch to the water, stir and add to the berries. Stir and cook until the berries thicken. Remove, and cool down.

Remove the dough from the refrigerator and place it in a tart form.

At the bottom of the tarte puts the boiled berry mass.

Blend 4 eggs with 350g of cottage cheese, milk, cornstarch, vanilla, sweetener.
Pour the berries on top.

Put in the oven at ~ 175 degrees and bake for ~ 35 minutes.
