Christmas Pavlova cake

I wanted something special for Christmas. The cake was absolutely delicious, but it should be put together right before serving (so that it doesn't "sit down").

 390 g Egg white
 600 g Refined sugar
 45 g Corn starch
 45 g Lemon juice
Ingredients for Cherry Jam
 400 g Frozen cherries
 80 g Sugar (or sweetener)
 20 g Corn starch
Ingredients for Mango - passion fruit jam
 250 g Mango
 100 g Passion fruit (3 pieces)
 60 g Sugar (or sweetener)
 15 g Corn starch
Ingredients for Cream
 500 g Cream cheese "Mascarpone"
 250 g Fresh cheese "Ricotta"
 200 g Sweet cream
 100 g Sugar (or sweetener)

 Berries
 Chocolate

Turn on the oven and heat it to 140 °C degrees. Normal mode - top and bottom, no convection.

Bake 3 meringue biscuits. I baked the third biscuit smaller because I left a little bit of the third meringue biscuit mass and baked small meringue biscuits for decorations.
Divide the ingredients into 3 equal parts - mix the meringue mass for each meringue biscuit separately, just before baking.

Put the egg whites in a bowl (they should be dry!) and start whipping them at low speed until they are whipped into a light foam

Little by little, without stopping whisking, gradually add sugar. When all the sugar has been added, turn on the mixer to the highest speed and whip until a thick, stiff mass is formed. ~10 minutes.

Place a metal pastry ring on the baking sheet (or draw 26 cm circles by hand) and put the meringue mass in it.

Put the meringue in the oven and immediately reduce the temperature to 90 °C and bake for ~1.5-2 hours. The meringue should remain white. Then turn off the stove, open the door and let the meringue cool.

Prepare cherry jam.
Put the cherries, sugar (or sweetener), and water in a bowl and mix so that there are no lumps. Add cornstarch, mix everything, and heat, stirring constantly, until the mass boils and becomes thick. Cool it down.

Prepare mango passion fruit jam.
Peel the mango, and cut it into pieces. Cut the passion fruit in half, remove the pulp with a spoon and add to the mango. Add sugar (or sweetener) and stir. Add the cornstarch, mix everything, and heat, stirring constantly, until the mass boils and thickens. Cool it down.

Assemble the cake

Place the first meringue biscuit on the baseplate. Apply the white cream, and put cherry jam or fresh berries of your choice on top.

Put another biscuit on top. Spread white cream on it, and put mango and passion fruit jam on top.

Put the third biscuit on top. Put a little cherry jam on it and decorate it with white cream, berries, and fruits to your liking.
