I've been thinking about a new savory cake for a while now. But a little different than usual. Something new and unprecedented. And we really liked it!

 250 g Sushi rice
 300 g Water
 35 g Rice vinegar
Ingredients for filling
 2 Boiled eggs
 2 Nori leaves
 200 g Cream cheese “Philadelphia light”
 150 g Cucumber
 120 g Avocado
 100 g Cold smoked/low salted salmon
 100 g Artificial caviar "Sudraba līnis"
 100 g Mayonnaise "Helmans Lighter" 3%
 50 g Dill
 15 g Black sesame seeds
 10 g Gelatin
 60 g Water

Prepare the sushi rice (according to the instructions on the packet). Cool down. Add rice vinegar and mix everything.

Prepare the base - put the rice in a form lined with an acetate plate, and tamp the rice, forming a cake mold with edges ~ 4-5 cm high. To facilitate the work, I used rubber gloves, which I lightly lubricate with oil.

Cut salmon, cucumber, and avocado into small cubes, chop the dill, and grate eggs. Mix everything, add sesame seeds and finely chopped nori leaves.

Add cream cheese and mayonnaise. Mix everything.

Dissolve the gelatin in a hot water bath and add to the mass.

Put the mass in a rice mold and let it harden in the refrigerator.
