Risotto with pumpkin
Pumpkin time has begun. I have caught a huge, 15 kg of berries…. And well, it has to be put into practice!
One of my favorite childhood treats was an anthill. And you can already imagine how much Kcal it was… I offer a healthier version so we can enjoy and not sin!
Beat the eggs with yogurt, add melted butter, sweetener, baking powder, flour and mix the dough that does not stick to your hands.
Divide the dough into 2-3 parts (to make it easier to grate afterwards) and put in the freezer for about 3 hours.
Remove the dough from the freezer and grate it on a baking tray.
Put in a preheated oven and bake for ~ 15 minutes.
Remove, cool and break by hand into small pieces.
Fry the finished cream - dry milk in a pan until it browns and turns into "lumps". Grind it in a coffee grinder.
Pour milk into a saucepan, add dry milk, starch, sweetener, heat until the mass thickens. Cool.
Cream "cookies", mix.
Cover the food film in a bowl and place the mass mixed with spoons, compress.
Put in the refrigerator to cool.
