Ingredients for the dough (shape diameter 26 cm)
 5 Eggs
 200 g Skimmed milk curd
 180 g Flour (100 g wholemeal flour + 80 g corn flour)
 100 g Kefir 2%
 50 g Sweetener (e.g. erythritol)
 4 g Baking powder
 Vanilla essence
 Salt, spices of your choice
Ingredients for filling
 240 g Apples
 150 g Ripe persimmon
 Cinnamon
 Sweetener
Directions

Peel and finely dice the apples and persimmons. Add the cinnamon and sweetener and mix.

Beat the eggs with sweetener. Beat for ~3 minutes until the mass increases in volume.

Add the kefir and sweetener to the curd and whisk until smooth.

Add the curd mixture to the egg mixture and whisk. Add the flour and baking powder and whisk again.

Pour half the batter into the baking tin, sprinkle with apples and pour over the remaining batter.

Place the baking tin in the oven and bake at 170 -175 °C for ~35-45 minutes.
