Salty zucchini cake with chanterelles
I had made a delicious zucchini roulette with chanterelles. I ate so quickly that I decided I needed another one. But this time it was made in the form of a cake.
Cutlets with Tofu cheese, which also is a great source of protein.
Boil water, put broccoli and cauliflower (divided into florets) in it and cook for 5 minutes.
Chop/blend mushrooms, chicken gyros and spinach in a food processor. Chop the leek. Grate the cheese.
Remove the broccoli and cauliflower from the water, cool and chop them in a food processor.
Place all the ingredients in a bowl, add the flour and spices and mix well.
With wet hands, form meatballs and place on a baking sheet.
Bake in an oven preheated at 175-180 °C for ~60 minutes.
