Delicious cream cheese roulade with dried berries and pistachios.

 200 g Cream cheese “Philadelphia" light
 60 g Dor blue cheese
 60 g Dried cranberries
 60 g Pistachios
 60 g Dried figs
 60 g Dried apricots
 60 g Raisins
 30 g Honey or maple syrup
 5 g Gelatin
 25 g Water
 For topping: 25 g chopped cranberries, 20 g pistachios and 20 g peanuts in honey

Prepare the cheese mixture: in a bowl, mix the cream cheese, finely grated Dor Blue, honey or maple syrup, chopped cranberries, pistachios and figs. Mix until smooth and homogeneous.

Pour 25g of cold water over 5g of gelatine and allow it to swell.

Dissolve the swollen gelatine in a hot water bath and add it to the cheese mixture. Set aside to allow the mixture to firm slightly.

Place the cheese mixture on the cling film and roll up the 'sausage'. Wrap tightly and chill for at least 1 hour in the fridge. I left it overnight.

Arrange the chopped cranberries, pistachios and figs on a flat plate.

Roll the cooled 'cheese sausage' in the cranberry-pistachio-fig mixture, pressing gently to ensure an even coating on all sides.

Serve: with fresh fruit or vegetables. Spread on biscuits, crackers and breads.
