
Sweet Potato and Zucchini Waffles with Cheese
Who doesn't love waffles? And this version with sweet potatoes, zucchini, and cheese is simply delicious!
A great breakfast and a great snack to take on the go!

Beat the eggs with the curd. Grate the zucchini and season with salt. Set aside to drain.
Squeeze the excess liquid from the zucchini. Add the grated cheese, the egg-curd mixture, the crushed garlic and the flour. Mix everything.
Place 1/3 of the dough in an oiled and preheated grill/waffle pan and bake until ready. Or bake as waffles, or in a regular pan under a lid, at a very low temperature.
