Ābolu pīrāgs (bez glutēna)

A big bag of beautiful apples came into my hands. Some of them were already in my stomach, while some were used to make this delicious apple-vanilla pie.

Ingredients (diameter of the mould 28 cm)
 3 Eggs
 100 g Egg white
 500 g Sweet apples
 275 g Skimmed milk curd
 200 g Kefir 0,1%
 90 g Flour (I have corn flour)
 60 g Corn starch
 30 g Whey protein (or the same flour)
 50 g Erythritol
 8 g Vanilla sugar (dr.Quther)
 Other sweetener as desired or required
 1 tsp. Soda
 1 tsp. Baking powder
Directions

Peel the apples and cut them into thin slices. Add the soda to the kefir, stir and leave to react.

Separate the egg yolks from the whites. Beat the egg yolks with the sweetener and vanilla sugar (~3 minutes, until they increase significantly in volume).

Add the kefir with soda to the egg yolks.

Blend the curd with egg white and add to the beaten eggs.

Sift the flour with the baking powder and add to the egg-curd-kefir mixture. Whisk until the batter is smooth.

Add the apples and mix so that the dough covers each apple slice.

Place the dough in the tin and bake in a preheated oven at 170 °C for ~35-40 minutes.
