Cake "Honey" with blackcurrants

I wanted something special with a honey flavour, so I made a honey cake with blackcurrants.

Ingredients For the biscuits (hearts)
 2 Eggs
 420 g Flour (I had 150g wholemeal oat flour + 150g wholemeal wheat flour + 120g premium wheat flour)
 140 g Sugar
 90 g Butter
 70 g Honey
 1 tsp. Soda
 A pinch of salt
Ingredients for Blackcurrant jam
 400 g Blackcurrants (frozen)
 100 g Water
 15 g Corn starch
 Sweetener
Ingredients for Cream
 900 g Culinary curd "Baltais"
 200 g Sweet cream (35%)
 Vanilla
 Sweetener
Ingredients for Decor
 150 g Different berries
Preparation of biscuits

Mix the sugar, honey and salt in a saucepan and heat gently until the sugar melts.

Stir in butter, melt. As soon as it boils, remove from heat and stir in soda. The mass becomes puffy but gradually loses its puffiness as it cools.

When the mixture has cooled to room temperature, stir in the eggs and most of the sifted flour. Spread the remaining flour on the table, place the dough on top and knead in the flour. The dough will turn out soft and quite sticky. Wrap it in cling film and put it in the fridge for a few hours (or until the next day). The dough will become more elastic and easier to roll out.

Place the dough on baking paper and roll it out. Place a paper stencil on top and cut out a heart shape with a sharp knife.

Remove the excess dough, roll it out again on baking paper and cut out the next hearts,

Transfer the hearts with all the baking paper to a baking tray and bake at 180 °C, one after the other, for about 6 minutes.

Cook the blackcurrants with the sweetener, add the cornstarch diluted in water, and boil again until the mixture thickens slightly. Set aside to cool.

Preparation of the cream

Whisk the culinary curd with the sweet cream, sweetener and vanilla. Transfer the cream into a pastry bag and set aside until assembling the cake.

Assemble the cake

Place the first biscuit on the base and, using a pastry bag, press cream 'balls' along the edges of the biscuit and, with small spaces, in the middle.

Fill the empty spaces between the white cream with cooled blackcurrant jam.

Do the same with the remaining biscuits. On the last heart, squeeze out only the cream 'balls'.

Decorate as you like.
