 100 g Milk 2% or other liquid
Ingredients for Filling Cream
 1 Egg
 250 g Fresh cheese Ricotta 6%
 150 g Culinary cottage cheese "Baltais"
 10 g Dry milk
 2 g Agar
 Sweetener (optional)
 Vanilla
Ingredients for Caramel
 80 g Maple leaf natural syrup (or other natural syrup)
 70 g Hazelnut
 50 g Water
 25 g Isomalt (or sugar)
 0.50 g Agar

Grind the biscuits in a food processor and gradually add the liquid - so much that when squeezing the mass in the palm of the hand, it sticks.

Put all the cream ingredients in a bowl and blend into a homogeneous mass.

Cookies in the form of crumbs. I have 18cm with removable edges and compress the mass to form a shape with edges ~ 4 cm high.

The whipped cheese is poured over cookies and placed at 130 degrees for ~ 45 - 50 minutes. You have to look after the stove. At 40 minutes, you should start "checking" so that it doesn't overcook - the mass should be still soft, because it will harden later.

Finished caramel - pour water in a small saucepan, add agar, isomalt (or sugar) and syrup. Everything cooked.

Sprinkle nuts on the cheesecake and pour over the caramel. It freezes.
