Ingredients
 350 g Various dried fruits and berries
 180 g Apple (weight peeled and cored)
 175 g Carrot (peeled and grated weight)
 100 g Liquid honey
 40 g Butter (soft)
 2 Eggs
 60 g Egg white
 120 g Milk 2%
 100 g Whole grain flour
 100 g Rice flour
 5 g Baking powder
 10 g Gingerbread spice "Santa Maria" (or a teaspoon each: ginger, nutmeg, cinnamon. I also add ginger - I like the spiciness)

If necessary, cut the larger dried fruits more finely. Cover with hot water and leave for 10 min. Then drain the water.

Cut the apples into small cubes, grate the carrot on a fine grater.

Whisk honey with soft butter to a creamy consistency. Add the eggs and spices and whisk until smooth.

Gradually add milk and flour. At the end, stir in the dried fruits, apple, and carrot.

Put the mass in a mold and bake at 170 °C for ~60 min.
