I really love and like to make cakes with a lot of fruits and berries.

Strawberry dessert cake

Ingredients (shape 18 cm)
 300 g Fresh berries (I use strawberries)
 300 g Culinary curd "Baltais"
 250 g Fresh cheese Ricotta Lago Maggiore 6%
 250 g Kefir 2%
 187 g Bananas
 150 g Finely ground muesli with berries
 30 g Gelatin
 180 g Water
 ¼ tsp. Vanillin
 Sweetener of your choice

Fry finely ground muesli in a frying pan. Cool down.

Blend the bananas and add the muesli. Stir and allow to swell slightly.

Pour 30 g of gelatin with cold water 180 g and leave to swell.

Put the muesli and banana mass into the mold and form a base with "sides" (I use a metal ring with a diameter of 18 cm with a double foil coating and an acetate plate inside to lift the edges).

Blend Ricotta with kefir, culinary cottage cheese, 1/4 tsp. vanillin (with vanillin carefully - if you add too much will have a bitter taste) and a sweetener of your choice.

Cut the strawberries into pieces and add to the curd-Ricotta mass. I blended everything a little so that the mass turned red-pink.

Dissolve the gelatin in a hot water bath (or in a microwave oven with pulses of ~2 times for 20 seconds.). But be careful - don't boil !!!

Dissolved gelatin is added to the curd mass and poured into a mold (the mass should be at room temperature).

Put the mold in the refrigerator to harden.
