It has been a long time since we usually have meat / fish, something from cereals and, of course, vegetables at lunch. I figured it all out and here's what came together.

Chicken fillet meatballs with couscous

Ingredients
 750 g Chicken fillet
 3 Eggs
 375 g Pumpkin
 375 g Broccoli or other vegetables
 23 g Garlic
 250 g Whole grain couscous (any other cereals may be used)
 500 ml Hot water
 Salt, pepper, spices of your choice
Directions

Grind the chicken fillet.

Pumpkin, leeks, garlic, chopped greens.

Sprinkle the couscous with boiling water, place a plate on top of the dish and leave to swell.

Add vegetables, couscous, spices to the chicken fillet, mix everything, make meatballs and place on a baking paper or silicone mat.

Bake for ~ 50 min ~ 175 degrees.
