A healthy salad made from local vegetables.

Grate the carrots, apple and celery. Chop the onion. Place everything in a bowl and mix with the lemon juice.
Separate the egg whites, grate them and add to the vegetables.
To make the 'mayonnaise', add the mashed egg yolks, mustards, honey and salt to the skimmed milk curd and blend everything into a smooth paste. You can add garlic, herbs, or other spices.
Mix the mayonnaise with the salad.
