Vegetarian curry with chickpeas, spinach and basmati rice

Ingredients
 400 ml Tomatoes, chopped, canned
 250 ml Coconut milk
 240 g Chickpeas (drained liquid, rinsed)
 120 g Onion
 30 g Spinach
 12 g Garlic
 10 g Extra virgin olive oil
 2 tbsp Curry
 1 tsp. Cumin
 ½ tsp. Turmeric
 ½ tsp. Paprika powder
 ¾ tsp. Salt
Ingredients for garnish
 120 g Basmati rice (or any other cereal, wholemeal pasta, noodles)
 10 g Extra virgin oil
 Turmeric

Heat a pan with olive oil (10 g) and fry the chopped onion and garlic.

Add curry powder, cumin, turmeric, paprika and salt. Fry while stirring for ~5 minutes.

Add chopped tomatoes, coconut milk, chickpeas.

Bring to a boil, stirring, then reduce the heat and simmer for 6 to 8 minutes, until ready.

Add the spinach and sauté for ~5 minutes.

Cook the rice - fry it in 10 g of oil, gradually add ~480 g of water, stir, turn off the heat and simmer until ready.
