Today is a takeaway lunch event. One, two, three and it's ready. Peach waffles with curd and blue cheese. Delicious!

Beat the eggs with the curd and egg white. Add the flour and stir.
Cut the peach and blue cheese into small cubes.
Stir in the diced peaches and cheese.
Spoon the batter onto a preheated waffle iron and bake the waffles. I cooked half of them as pancakes in a frying pan under a lid on low heat.
