I love summer because there are lots of local berries and fruit!

Beat the eggs with the curd, sweetener, baking powder and vanilla.
Add the flour and protein. Stir the peaches, cut into small pieces, into the batter.
Spoon the batter into the preheated waffle pan and bake until ready. Or bake in a regular pan under a lid, at a very low temperature.
