Here’s an idea for a healthy holiday snack.

Chicken Fillet Snack

Ingredients for chicken fillet cutlets
 2 Eggs
 1266 g Chicken fillet
 300 g Pumpkin
 150 g Bell pepper (paprika)
 75 g Onion
 30 g Garlic
 Salt, pepper, spices of your choice
 Sesame seeds
Other ingredients
 Wholemeal bread with seeds
 Cream cheese "Philadelphia light", or "Latgale", or any other light cream cheese
 Pickled cucumber
 Olives
 Lettuce leaves

Grind all the ingredients for the cutlets and add the seasonings.

Spread the mixture in a thin layer on a baking sheet and sprinkle with sesame seeds.

Bake in the oven at 180 °C for about 30–35 minutes.

Let it cool, then use a glass or a metal ring to cut out circles.

Cut out circles from bread using a glass or a metal ring, then roast them in the oven at 200°C (but don’t overcook them).

Spread cream cheese on the bread, place a lettuce leaf on top, and top with a chicken cutlet.

Garnish with a slice of pickled cucumber and half an olive.

The nutritional value is not mentioned this time. Because during the holidays, I don’t count calories — just cooking healthy meals.
