 1 Ripe avocado
 225 g Canned chickpeas
 150 g Cherry tomatoes
 60 g Scallions (or red onion)
 50 g Sun-dried tomatoes
 30 g Spinach
 10 g Maple leaf syrup
 20 g Raspberry vinegar
 1 tsp. Dijon mustard
 Dried or fresh garlic
 Herb salt
 Lemon pepper

Drain excess liquid from chickpeas.

Dice the avocado and halve the tomatoes. Cut the dried tomatoes finely too.

Place all the ingredients in a bowl and mix.
